Getting back to the level of Gnar/speed you use to have, or should I just bit the bullet and accept I am going to be slow for a few weeks/couple of months ?

Back from how long off? What sort of base you building from?
If it's been a while then just accept you'll be slow for a while and get the time in on the bike.
If it's a shorter break then intervals, hills, sprints, longer tempo sessions, etc. Oh and race.
(All assuming it's fitness and not skills you're lacking.)
