My Garmin now only wants to work with one particular USB cable. Has anyone else had this issue? Does anyone know of a fix?

not particularly, sounds like it's being very picky indeed (new women perhaps?) try checking the port for dirt, checking the cables for dirt? that's not normal unless the cables are dodgy to start with or the port is worn

I have the same issue. Some cables are for charging only and some for data (and charging) I believe.

Mine started getting fussy and eventually failed to connect to the computer about 4 months ago. Some googling around suggested it was dirt in the port. I used some IPA and an old toothbrush to give it a good clean and it's been completely fine since.
Definitely worth giving the USB port a clean.
