So which one then? SLX, XT, X7, X9? SRAM (grip) shifters and rear mech, so the symmetry of a SRAM front mech appeals, but are Shimano ones better?

Oh no, I would say Shimano XT but I've never tried SRAM components.

Last bike build I could only find Shimanos so got an XT but am dissapointed. A lot more effort required than on my old build with the X9 and it is a very similar set-up - Hardtail top clamp, top pull X7 lever.
Keeping an eye open for an X9.

Had to use an X7 on my SX because the cable clamp on Shimano mechs is too low and fouls the chainstay.

Got an old X-Gen mech on my P7. Both mechs have been faultless although the X-Gen have a spring that would strain the thumb of Hercules.

I never had any problems with the Shimano ones I used before fitting Sram.
