Can anyone recommend anywhere noteworthy to ride 'on-the-way'. We have the luxury of time, and would like to break up the journey.

It's a little out of the way, but Suisse Normande is utterly lovely. Both in terms of riding and scenery/food/terroir.

...that'd be a very long ride, I wouldn't recommend riding through the Somme ๐Ÿ˜‰

What about the Jura, although you're a fair way down by then?

There isn't much. Just do an over-nighter somewhere and carry on driving. Have an extra day in the Alps.

There must be LOADS. Have you looked out the window as you drive through France? Some of it is very boring, but there is lots of lovely forest.
