Hello all. I've seen some mint 2010 Fox forks that I fancy but they're 80mm when I need 100mm or 120mm. I know you can space longer ones down so can you do the same up?

In a word No. You can only go shorter from a longer length.
If they were originally a 120mm say then you could but that is unlikely.

That's spot on, if they're 80's then they're always 80's, unless of course as mentioned they've been reduced down already in which case the spacers can be taken back out.
