What would be a good solid reliable choice for a work stand to be used at events (in a big crafter sized van)

You don't need a van specific workstand. Most of them fold and I can fit my stand in the car so you should have no problems.

Quite happy with this one https://amzn.to/2PWGyax but they aren't cheap.
Folds quite small and you can get a storage bag for it (costs even more!)
You could get one of those wall ones and fix it to the one of the barn doors on the van.
