Hi folks. Im building a bike up and need the above. instead or purchasing the specific shimano bolts at around £3 a bolt can i use m5 hex head bolts the same length?

Yep! Though from experience... Get stainless ones. 😅

The official ones have that little pin thing on the top to allow you to put a circlip through, but just use some blue threadlock.

Ahh, i was wondering what that pin thing was for. Its on a road bike, but i imagine that doesn't make much difference?

The pin's there to stop the bolt unscrewing completely if it comes loose. A bit belt & braces really, but you can make your own mind up as to whether you need it.

My Diverge came without any clips on the bolts and I've changed the rear calliper twice since. Bolts holding fine still.

As others have said - regular Stainless cap screws will be fine.
Should be able to buy a bag of 50 from Toolstation/Screwfix.
