How difficult is it to fit Hope Brakes (X2's). Bearing in mind I have the mechanical know how/skills of a slug.

Depends how well you want to fit them. Any monkey can slap them on, squeeze the lever and tighten the caliper bolts.
You need to be a bit more patient if you want to align the calipers perfectly and trim the hoses, you need to be a bit more patient and methodical.
