Going to be fitting some carbon risers in the next few days. Anything special I should be doing?
Should I use a torque wrench? Any recommendations on a good value torque wrench?
Have also heard I should use a carbon paste of some kind. Any pointers?

I've never bothered with carbon paste when fitting bars, but couldn't hurt I guess.
I always keep tightening until I hear a crunch. Then I know they are fixed ๐
Or tighten just enough that they cant move - no more....

You can if you want, but you don't have to.
I have reasonably well calibrated TorqueFingers so I just use those but if you're not confident, use a torque wrench/torque key. A half decent one at that, with such low values, cheap ones tend to be made more for automotive use and can be wildly inaccurate at the lowest and highest ends.
Pretty much everyone overtightens things tbh.

Nope, carbon stems tend to be pretty but no better than alu ones.
With the Ritchey tool you can't change the bit, buy the one from Superstar as you can put any bit in ๐
