mine would be marble and lemon drizzle...

does there have to be any 'healthy' element to it?
Is that "marble and lemon drizzle" one or two cakes?

Kinda finding Whoopie pies interesting at the moment (been reading the hummingbird bakery cookbook), though I need to make smaller ones though (got 4 when I should have had 8...).
Muffin are always easy and lovely, [url= http://www.rivercottage.net/recipes/lemon-curd-marble-muffins/p:2/ ]lemon curd one by Hugh next[/url] or maybe just some scones...

Nigella's [url= http://wookieecookie.wordpress.com/2010/09/22/blondies-nigella-style/ ]oat Blondies[/url] Kinda healthy... as it has oats in (just ignore the condensed milk content 😉 ) - oh and the picture make it look kinda foul, ignore it.

and the ultimate never fail carrot cake is from hummingbird, 3 layers (I usually reduce it to two, as thats big enough)

MM, actually got that on my todo list.. The Hairy bikers version, which is the only one I've seen with meringue ontop...saying that, is that meringue or cream?

anything from the Cake Hotel in Maribor. Just pick the next cake off the cake menu each day 🙂 And if it's hot, then pick the next icecream off the icecream menu too 🙂

Any kind of cake is good in my eyes. Need to have a well brewed cup of Yorkshire tea with it with just a splash of milk. Or if its really hot, a cold can of Stella 4.

my other half makes an ace sticky toffee, banana and pecan number..

A moist fruit cake for preference but my wife does a very nice pineapple upside down cake which finished off loweys walna scar route a couple years ago perfectly. The planets aligned, perfect weather, route, company and post ride refuel, magic.
Other memorable refuels are millionaire shortbread, bakewell tart, rocky road (is that still cake?) and paradise slice.

Most cakes will do at a push except, and I can't overstate this enough, [i]"cake"[/i] that includes vegetables! 😈

Although I'm tempted to drive down to Mental Mickeys in Dorset for Apple Cake and pop in at stumpy01s for a slice of Coffee & Walnut on the way back 🙂

Perhaps a slice of Gateaux StHonoré or maybe a little Buchette Delice or even a couple of Petite Choux Chantilly. Maybe a little Flan.

And a lion bar.
