I know that this has probably been asked a number of times and that it's a pretty basic question but would a new SRAM chain be compatible with a new shimano cassette or do I need to get a SRAM one? thanks

Will be fine, as long as they're both the same speed.

shimano chains are much better than sram ones these days...
