Removed wheels to get bike in the car for a night ride on Weds and put the bike back together successfully before the ride. Reversed the process on the way home and left bike in the car overnight as I was cold and wet and tired when I got back. went to put bike away the next day and the pads had closed together a little so as not to allow the disk to slide in. What am I doing wrong? XT disks if it's any help. I'm probably just being stupid.

You probably squeezed the lever a bit pushing the pistons in slightly when you put it in the car. Carefully lever them apart again (taking care not to damage / contaminate the pads.

You can just take the pads off and then use something like a flathead screwdriver to press the pistons back into the caliper. This will 'reset them', remount the wheel, pump the brake a few times and they'll be OK

your doing nothing wrong, you probably knocked the lever whilst loading/unloading (or even it moving about during the drive home).
Either be a bit more careful loading/unloading or go to your LBS and ask them for some of the shimano 'travel' spacers (should have loads lying about), these clip in nicely between the pads and stop the pistons moving during "travelling"...

in the meantime just carelly prise apart the pads, nowt to worry about, as long as you don't damage the pads.

Cheers. I'll have a go with a plastic tyre leaver or credit card or something.

I just stick a screwdriver in between the pads & lever them back - I can't really think how you'd do any relevant damage
