My cross bike has an IS mount on the rear with a 160mm rotor
New frame has post mount on the rear
What adaptor do I need (if any) to run the same brake and rotor size on the new frame?
They are Shimano RS785 calipers

Probably none. There's an outside chance it'll need a +20mm post to post but most likely take the IS adapter off and it'll bolt straight on.
