off to family do in oakhampton for a couple of weeks in aug and iam taking bike(singlespeed 34-18)and wondered what ratio works best for Dartmoor and surounding countryside
It doesn't. 22-32-44 with a 11-34 works best.
Otherwise bring a climbing gear, you'll need it.
It's doable on that ratio but few nutters do ride the moor SS.
If you've got gears bring them if not, be warned, 2:1 is pretty tough going if you're not used to lots of climbing.

I've done Dartmoor on a SS before, and it's HARD!
I'd say 1x9 is the minimum you'll need ๐
if you're riding western dartmoor then a singlespeed won't be too much of a problem. from what i've ridden, the oakehampton area isn't that steep. i've ridden the burrator area on a 32:16 myself and it's fine from the ss aspect but you'll be pinging around like a pea on a drum on a ht. not a lot of fun ime.
eastern dartmoor and some central dartmoor is a different kettle of fish. i won't make any asumptions about your fitness but you'd be doing well to clear some of the landmark climbs either way. having said that, it's so steep in places that we're just resigned to hike a biking up stuff anyway, geared or ss.
if ss is all you've got then bring it and you'll still get lots of good riding in, especially if you hook up with a local to show you the better stuff. as i said, we'll be walking the steepest stuff anyhow.

Although there are some eastern moor ss friendly routes you can piece together. I ride 32:16 up there IF I take the ss, which is a challenge but good fun.
