Not using my SS anymore thinking of running a 7 speed setup, before I start stripping wheels down will it fit?

Not even close, 7 speed blocks are only 3mm narrower than 8/9/10, the SS hub is smaller than that.

Can you get 6 speed on it like on hope ss hubs ?

Not familiar with ck ss hubs though

Hope 6 speed is 6 of 9 from a 9 speed cassette

Exchange 'machining' for 'butchering with a file' and she'll be reet. The whole waltworks blog is definately worth a perousal ๐Ÿ˜€

There's a couple of pictures of the machining that's needed to make it fit.
