Apologies if this has been done, a very good short documentary.

In 2018, Michael Broadwith attempted to set a new Land's End to John o'Groats cycling record. This is his story

I wonder how many actually unbreakable records there are? It's clearly just hyperbole in most cases as it's usually just used to mean the current record is well ahead of other times. For something to be 'unbreakable' there would have to have been some change in rules/route/conditions or suchlike.

Not cycling but a contender might be the Ben Nevis race as the nature of the course has changed a lot. Even with that I expect someone will beat it at some point.
