Is there any reason not to use an inset 3 CK HS with a carbon steerer - I seem to remember an issue with a groove being worn in steerers by them a few years back.

The groove was caused by CKs "better" design. When the CC patent ran out, they suddenly jumped to use that. Any modern CK headset should be just fine (I use one on a carbon steerer).
