looking at two different road bikes-
one has 50/34t chainset and 12-25t cassette
the other has -
52/39t chainset and 12-26t cassette
what will these differences make to riding them?

Get the 50/34.
Unless you race/have thighs like Cancellara/live in the Fens.

Top gear is marginally higher with a 52/39, bottom gear is far higher. Having always been a fan of standard chainsets I'd now go for a compact (50/34) on a new bike.
