Bearing suppliers will give you the right ones if you take them all out. Headset is easy it's a cane creek isn't it.. CRC sell them all be it with the crown race. If you drop it out you can measure it and order one.

Tbf canyon won't sell you the headset bearings - just a whole new headset.

Frames are trickier you'll need to strip the frame and take the bearings to a supplier and get them all matched. Frame bearings are a job for your lbs if you ask me - they're a ballache on canyons. I knackered a rocker arm changing mine and it took months to sort.
