This may be too big an ask, but does anyone know where I can find a rear 700c wheel with a Campagnolo 10 speed hub and disk compatible? It's for my Kaffenback.

Fulcrum and Mavic disc wheels can both be easily converted. I believe Kinesis wheels can be as well. You might end up buying a shimnao one plus a free hub and doing a swap- not many wheel sets come as champagne these days!

Hunt have Campag free hubs for their wheels, also campag have just realised a disc wheel set., and all current freehubs are 9/10/11 compatible.

Apparently the ED11 supports 10 speed as well?

Shimano splined, Campagnolo spaced cassettes are available. Some DT Swiss or Novatec hubs also take a Campagnolo pattern freehub
