I fancy having a go myself, whatever I get needs to be compatable with bolt thru front and rear hubs. What would you guys suggest? Minoura?

Download Roger M's book from the wheelpro website and get the plans to make one yourself.
Not difficult and better than most you can buy.

I've only done back wheels and then used the bike frame and zip-ties for tightening and trueing. Prolly not ideal.
