I like the way SRAM cassettes have a bolt to undo, but this one's shimano. And I want to rob it to test out singlespeed ratios on the cheap.

What's the best way to break one apart?

Just grind the back of the pins off, or pay £4 for a single sprocket of ebay !!

3 x 3mm (I think) hex head bolts in the back of the largest sproket of most Shimano ones I've had...
Or if it's a really cheap one and riveted then break out the grinder... 🙂

No hex bolts at either end! Don't have a grinder handy either, so I might just have to forget the idea.

if you're only testing, can't you just keep the cassette complete & stay in 1 gear for a whole ride (even set the limit screws if you need to)

Most shimano ones that aren't spider-type now just have a rivet holding them together - just file off the head on the back of the biggest sprocket and then they'll come apart - still works fine if you put it all back together (without the rivets). Simples.
