Can the amount of drop of the brand-x dropper be changed? I have just watched a vid about the PNW version of it and apparently the drop is adjustable in 5mm increments

I can confirm it works with the One Up spacers. I had to do it on my wife's post.

Yes, yes it can. As above, the One-up method works fine with 31.6 version.
The 30.9 is slightly different inside so the spacer "arms" have to be very thin and are not stiff enough to work properly.

Be careful on this one - there seem to be 2 versions of the Oneup post (with 2 different kinds of shim) and 2 different versions of the brand x (at least). I bought the white plastic shim kit which works with earlier brand x droppers but it doesn’t work with the newer style brand x. Maybe the brass later style Oneup shims will work with the later brand x?

The older brand x had a smooth top collar - the later one has a kind of big groove in it.

I meant to update the Brand X thread from last week but I've been a bit busy.

I had a go at shortening the 2020 Brand X post, you can tell the versions apart by the collar. New on left, old on right. You can see how the OneUp shim fits the post on the right.

Old vs new Brand X

I also have the 10mm OneUp v2 metal shims (I've a lot of droppers) but the 2020 Brand X doesn't seem to have the grooves just below the collar to fit them. Could be I didn't take the post apart enough but I suspect while they may still be similar internally it might be some extra machining OneUp do to the parts specially for the metal shims.

Just to add, it's the 30.9mm (older) version I've done it on. It's a bit fiddly, but it 100% works.
