When the piston thingies are too close together when changing out pads......what do you encourage them back with?

I use a screwdriver - but this always feel a botchy way to do it....

Big blunt screwdriver (every proper toolbox has one, no use at all for screws but useful for opening paintpots). But, do it with the old pads in to protect the pistons (you can do it with new pads as long as you're careful but it's better to remove the chance).

I use tyre levers, but if it's particularly stubborn I swap to blunt screwdrivers against old pads ๐Ÿ™‚

Depends what brakes - Shimano M675s have ceramic pistons and won't appreciate being forced back with lumps of metal. I use a tyre lever usually.

I've also got some crappy Juicy 5s on the hack bike - metal pistons there. I use anything I can lay my hands on to push them back, it rarely works and I have to resort to opening the bleed port to get them to shift.
