If the ideal boost chainline is 51mm why is my SLX M7000 53.4mm ?

I guess you could move a spacer over from driveside to non-driveside.  I doubt anyone's pelvis/lower back would take offense at that

Because the standard SLX chainline is 50.4 and boost is 3mm wider. Why its 50.4 you'd have to ask Shimano... I did know why once, probably something to do with 2x chainlines or the like.

It's to because the chain would catch on the biggest ring at the back. Wolf tooth's website has a longer explanation.

All brand’s chainlines are wider than optimal in order to give the clearances required between what is sometimes a bunfight over space between large volume tyres, chainstay/tyre clearance and chainring/chainstay clearance. Nothing to do with 2x.

The benefit of a bolt on ring is that you can alter the chainline with chainring spacers.

This. Every boost chain line I push inwards runs better, but as has been said, it's a bun fight for clearance between the stay, chainring and space for fat tyres.
