New longer hoses needed on my new build. The calliper and lever will have oil in them (last gen xtr trail brakes btw), so do I just fit the cup and pump oil down and the air will bubble up, or should it fill with a syringe from the bottom up?

syringe from the bottom up. Use the funnel to collect the excess.

Those 2 suggestions definitely work well for a simple bleed on an existing system. I've used this technique many times.

I used the bottom up method to purge the old oil from the calliper, air from the new hose and remaining oil in the reservoir / lever. This worked very well. I had no air bubbles after pushing enough oil through to fill the cup. The levers felt good straight away.

I'm actually amazed how mucky the old used oil looked.
