When I was there I did notice some nice trails through plantations etc but I wouldn't risk taking your nice bike, maybe if you have a second hardtail as the hire bikes available are of the older than old cantilever brake type fully rigid and rusty - has been 8 years since I was there though so things might of changed.
You must embrace the locals and enjoy lobster at one of their houses on the coast and swim with dolphins (near Guardalavaca) as they are kept in the sea rather than in a small pool.
Enjoy the cuban experience!

You're at the best end of Cuba for a holiday, it's much less developed than the resorts near Havana and is much better for it. As said before, there's lots of dusty tracks through the plantations which would be great to explore. I didn't ride much when I was there though, as I got hooked on snorkelling! I've just realised it's 10 years since I was there so who knows how accurate my opinion is?

I recently met a guy who cycled through Cuba. He raved about it so much, I want to do it myself.

His advice is to carry a heap of spares because they are not easy to source quickly.

He got his accommodation by talking to locals as he passed through. He used a mtb with road oriented tyres.

Also there is a prevailing wind. It is a good idea to take advantage of it, otherwise you are plugging away into it.
