Can someone explain what the deal is here? Am I right in thinking
there are three axle diameter options: 9, 15 and 20mm, and that they
can come in either QR (9 or 15mm) or bolt through (15 or 20mm)? Are the normal/old/bog standard QRs 9mm?

The problem is there are various terms used like Maxle lite, Maxle
etc, are these just the manufacturer's own brands for the various
standards?

I have a "standard" QR front hub but I know I can convert this to a
15mm. Does this mean any fork I buy could be 9 or 15mm, but also QR or
bolt through? Just hypothetically like.....?

Just three types of fork. QR, QR15 and 20mm.
QR the bit that actually sits in the fork drop outs on the hub measures 9mm not the QR squewer.
QR 15mm foxs little bolt through design with a QR lever.
20mm front can have a QR operated lever or the older style allen bolt.
On the other end, QR rear drop outs on the frame measure 10mm so you can fit a bolt through axle (10mm) to a QR rear frame.
Rear maxles can be 10mm or 12mm and require a maxle rear end. Not retro fittable to a QR frame without some welding.

You missed a 9mm bolt through for the front. Not that common, but Specialized do it with DT Swiss RWS skewers.

Although a 9mm bolt through skewer won't fit every hub.

Or Syntace 12mm rear end
