Just went to change the hoses,attempted to undo the bolt the cable slots into at the lever end and rounded the bolt!! now is it just stiff or am i missing something dont want to attempt the other till i get some advice

Yep, should just unscrew normally. Maybe a bit corroded/rusted depending on age...I know my Juicy 5s have some rust/corrosion around there.

another thing can i re use the olive and barb or are new ones required?
New ones (Olives deffo, might get away with re-using barbs). I'm sure all the info you need is in that youtube link.
New ones advisable although I'm sure someone will come along and say they have re-used them.
