I swapped a 105 5800 cassette and chain for a new 5800 cassette and an ultegra 6800 chain, I thought 5800 and 6800 were compatible with each other but my drivetrain now sounds like I'm dragging cutlery behind me

should I put back a 105 chain on it?

Check the routing of the chain through the rear mech

^ This, Shimano is compatible across the range - if you're matching 11 speed for 11 speed.

Chains are directional, text facing out.

I am using 6700 chain and mech with a 4700 cassette at the moment, working just fine.

everything is installed correctly

I noticed the tooth profile changed a bit from the first 5800 cassette to the new one

In general Shimano Road stuff should be as cross compatible as you'd expect with the exception of pull ratios for brakes and one of the Tiagras (4600?)

If you've put a 32 or more cassette with a short cage derailleur then you'll get noise especially in the lower gears

Sorry, to expand on my earlier post, Shimano changed the way the chain routes through the rear mech, it goes the other way past the little knobby bit between the jockey wheels compared to previous versions. Check that.
