Just fitted a Zee rear mech with a 11-40 (Hope) cassette.
Gears 5-10 require more cable tension to work correctly, which makes the chain catch on the lower gear when in gears 1-3.
So if it's on gear 2 the chain is rubbing/catching on gear 1.
If I get 1-5 smooth it take more than a click of the lever to go from 10-5.
OCD or what?

Sounds like you've got a bent mech hanger.

Or cable not routed correctly.
But more likely what Coatesy said.
