On a set of M575s the bite point is very low. I found a small allen key bolt that seems to adjust reach but not bite point. Anyone know the way to adjust the bite point? Cheers

I've got an M595 set and when the pads wear down, the bite point gets closer to the bars. Not found any easy way of adjusting the bite.
Unlike M775s which never seem to change regardless of pad wear.

Most disc brakes have reach adjust but not bite point adjust, IIRC some of my hopes have it but others not. On most designs the bite point is set entirely by the seal "squishback", i.e. the piston moves out, pulling the seal with it a bit and then when the pressure is released the piston comes back with the seal force. The lack of bite point adjust is annoying because if you have small hands, as my other half does, you can't adjust the reach without affecting the bite point on many.

You can over-fill the system. Push the pads out a bit, top up with fluid. Seal it all up again.

Make sure the pistons are moving freely, then give it a thorough(and time consuming)bleed, they usually come with a lot of air in them, but once bled properly they will have a very short and solid lever.

take out front wheel, pull lever once and put wheel back in. ๐Ÿ™‚

They should be self adjusting so over filling won't help. As Jedi says, take the wheel out and give it a squeeze. This should over adjust them and hopefully they will relax back to a good position. You might need to push the pads back in and try it a few times to get the right place.
