I have been on a fairly extensive search and test ride of some gravel bikes and I think (probably) I am at the final hurdle before pulling the trigger.
Which to choose however...
Forme monsal 2 (upgrade the wheels to hope25)
Cotic Escapade platinum build....
What would you do?
I'd get the new Sonder Camino v3 with GRX build and then upgrade the wheels

I have absolutely no clue but assuming Cotic because STW? 😉
What is your spec priority?
My priority is something to ride on and off-road, comfortably that isn’t one of my mountain bikes. Bike packing etc etc....
Spec wise I’m happy with 1x and 105/SRAM equivalents
Escapade for me (despite the headtube being too long, but that's just my personal preference). It has a BSA BB rather than pressfit (big plus in my book). The Cotic also has marginally more clearance.
The Monsal has a nice looking frame, but that gloss mercury on the Escapade looks lovely!
@dmck16 I have one of their last mercury frames on hold till tomorrow.... tonight is going to be a long night!
