73.5deg seat angle,...

Will this be a problem?

Kaffenback frame but new F-mech (Shimano R770) says its for 61-66deg SA.

Currently have a 105 which (as far as I can tell) has the same 61-66 deg recommendation. Will it be a problem?

Are you changing to flat bar shifters? That mech is designed to do the same job as a 105 but with flat bar shifters instead of STIs.

Something in the back of my brain says that this is actually about angle to seatstays, but that's probably wrong.

No - the 61-66deg angle is the angle between the chainstays and seat tube, not the seat tube angle.

Kaffenbacks (when I was there) have a 63.59deg angle between chainstay and seat tube so you will be fine.

Yup flat bar 10sp shifters (overpriced- YUP!)
