Thinking about getting wider rims, probably 30mm Id or just above but not sure if there’s space in my 2016 pike fork.
Anyone done this?
Currently using a 2.5 wt minion or shorty on a 25mm id rim which does fit and guessing the same tyre will be wider but not as tall on a wider rim

No problem at all. Currently on a 16 Pike with ARC30s and 2.5 WT DHFs. A friend ran '15 Pikes with 2.8 Maxxis Something on 35mm Ibis rims and they were OK in the dry.
You'll have no issues with your intended choice 🙂

I have Sixth Element 32mm internal rims with a 2.6 Nobby Nic and a Pike, plenty of room. I was toying with the idea of trying a 2.8 in there.....
