probably done to death but....... if i put drops on a 29er and the uci ok discs on road bikes could i do a crit ,cx or xc (local stuff) on the same bike just changing tyres/spare set of wheels?

yes, but it will be .compromise - gearing, handling, etc... will not be as good/focused as dedicated bikes.

It'll either be very long with the drops or very short with flat bars.

What he said, road bikes have very short top tubes.
