What size tube fits a B+ Tyre, say 3" wide (~40mm rim)
(or rather which one should I have in my pack in case I need a tube?)

You'll get away with any 650B tube but I have a couple of Specialized B+ tubes as emergency spares. They are 650B x 2.3 - 3.0"

Can you get away with a 29er tube?

I'd have thought so (never tried it). Just be careful when re-fitting the tyre, especially the second bead, so you don't catch the tube.

I ran 27.5" tubes without issue before going tubeless
