Has anyone used one of these from Toronto Cycles?:

It looks to me that it could flex a bit and cause either noisy braking or uneven pad wear. Can anyone tell me if I'm right or wrong?

Looks heavy & a good place for stones to get caught but It shouldn't flex unless your disc's bent.

Quoted weight is 135g.
In my experience it doesn't take much flex to make a brake noisy. 180mm Maguras in particular can be very noisy but the same brake remounted with a 160mm disc is now silent.
