Thinking of going 1x11, but can I keep my XT cranks with my race face 34t wide/narrow chainring, and just buy 11 speed cassette, chain, shifter and rear mech??

Yes. The original (SRAM) N/W chainring was designed for1x11.

Of course you can, know plenty mixing and matching the NW brands. RF Next Carbon cranks were a popular choice here too.
