Might sound like a daft question but how do I change my rear 160mm disc to 180mm? Is simply a case of bolting the larger 1 on or do I need an adaptor of some description?

Yes you need an adapter to suit your caliper, fork mounting and disc size. Should be simple but can get complicated. Here's a few Shimano adapters to get you started.
