Im a 10sp guy....will my Hope Pro 2 and Pro 2 Evo hubs take an 11sp shimano mtb cassette?

The 11 speed Shimano is the same width as the ten speed, the biggest cog is offset towards the centre of the wheel to gain the extra width needed. So you'll be fine.
