Looking at a new touring frame that's 1" ahead, I'd only go 11/8" for the stem, but I couldn't look at it all day if it looks mingin.
Your horrors please 😕

I guess it depends on the stem, but i used to use a Salsa 1 1/8 ahead stem on my Bontrager. This was a "proper" salsa stem, i.e. welded cromo rather than forged or aluminium.

I have that set up on my Harry Hall touring bike. I think it looks fine.

Look around rather than down.
It's will look just fine IMO unless its a pig ugly stem in the first place
