I'm looking at getting a Hope Tech Evo M4 front brake and haven't quite enough to buy the rotor to match at the moment(The wife would kill me!). I'm using Avis 185mm rotors at the mo and want to check if these would be alright?

Every other combination I have used has been fine.
Used avids with Hope minis so i cannot see there being a problem tbh
Fine although you might need a washer between the caliper and adaptor just to get clearance as the hope is designed for 183. Or, use the avid adaptor which I assume you currently have.
Yeah, I've Avid mounts and some spare cone washers. That's the brake ordered, looking forward to some tyre screeching stopping power!!!

As said, had to dremmel a bit off my old Jucy calipers to run Hope floaters. Also, they hit the fork leg with On-One carbon forks.
