    I’m the same, depressed and anxious kept me off my bike mtb for 5 years, on holiday last year in Thailand I rode 1000km and loved it (5months so 25km a day) So I’m back on the hardtail and doing 3 rides a week. In one month my life is changing day by day. Big up to Mental health battles and if anyone wants a ride out near Skipton give me a shout 🤘🤘🤘

    That’s an epic goal. 100 miles a day on a road bike is achievable I’m sure but on an Mtb bikepacking 5 days in a row? I recon 70 miles a day.

    I use Crank Brothers with Shimano. 2nd pair of shoes. I would not go back

    I’m still riding my Cannondale Beast of the east from 97, its an absolute weapon of a bike 18″ frame. Unstoppable.

    Use 100g of fresh pork mince to the initial mix before washing. It is sealed in the liquor so will not go off but will improve the body and strength .

    Plus 1 for up North , Chang Mai has X biking and you can hire other bikes from around the city , I have a home in the North east near the Phu pan mountains so get the choice of riding around the Basin farms and villages or the mountains , Java have a strong following all around Thailand and should be able to offer advice on rental (Java think carbon frames hollow tech bb and decent brakes ) Also a sizeable Fat biking community all over Thailand . If you go cycling take a Garmin and pre plot the routes as out of town in villages most won’t speak english and signs will be in Thai . My Garmin is my best friend out there on a 50 k ride it is proper easy to get lost .

    OK i am not holding back . I will tell it how it is. If the staff at pubs and restaurants were to all get Minimum wage for trainees and rising with promotion responsibility then your meal would cost £38.00 a main course .WOULD YOU PAY IT . I will answer for you . now consider these points.
    You pay a garage £120.00 upwards to do 3 hours work on your car ?
    A plumber or electrician £80 for a 1 hour job
    ect ect but then you want a steak for £14.00 ???
    I know it costs £ 6.00 in Aada of fresco’s blah blah,
    The reality is this . If it is a busy restaurant with 100 covers a service there will be 4 chefs maybe 5 1 or 2 kp a manager an assistant manager and maybe a bar man or 2 and 6 servers so 15 to 17 , then maybe a cleaner all these need paying as well as the building and suppliers .

    Now your girlfriend may love cooking at home and may even excel at a dinner party how lovely . In a professional kitchen where every chef has 10 to 15 jobs on the go constantly for 15 hours a day 5 days a week i will tell you now as a trainee she has little to offer and will contribute by picking and washing lettuce and herbs prepping veg or making some basic desserts a lot slower than a trained chef . So even though she is not officially an apprentice she IS AN APPRENTICE . For this job and the next 5 or ten jobs until she really finds here feet and her palette and stops drooling over shitty cookbooks and actually uses that £40 instead of a book by working for free at a top place hoping to get a position .
    It is a brutal brutal job and i love it . I have worked in the past for Marco Pierre White , Gordon ramsey , JC Novelli , i have run successful places for 15 years as well as Working for 2 Formula 1 teams for 3 years , in fact i turned down a 3 year contract with Mercedes F1 team in January. Now some weeks i work 90 hours over weeks a little less at 70 hours i have done this for 25 years . I love it and i have worked many times for free just for experience or even dropped salary to work somewhere just to have it on my CV .
    Cooking is a passion and not about the money . It has been kind to me and i have worked hard and missed a lot to be where i am today .
    Bottom line she is an apprentice till she can really cook , look at boiling point Gordon Ramsey on you tube and do not focus on ramsey focus on the chefs faces and there reactions , I was there in that kitchen at that time we thrived on the pressure because we knew we were cooking the best food in the UK for one of the best chefs. he is/was a $wat and a bully but he could cook, we started at 6am and finished around 1am . Then we partied and then went back and did it again . Can she look past the blocking for over cooking cutting something wrong and being slow ?? you have to want to do it ?

    I would book flights through Travel bag or Trailfinders, then 2 weeks before you go – go to late rooms and book hotels where you want to stay ,it really is easy . Every town in the touristy areas have local travel agents who can book trips and days out even connecting flights between areas, BKK to Samui and samui to Phuket ect trust them they are not out to rip you off , i have been taken to dine / shopping even stayed the night with a travel agents family . do some research and really enjoy make it YOUR holiday not a brouchere. I always just turn up and wing it , one holiday went from 2 weeks to 5 months this way ,another 2 went from 2 weeks to 3 months – so much to see . Just roll the dice .

    I ride a lot when i am in Thailand , i use a Garmin gps and plot a route first then follow the pre planned route , some times i veer off course when i spot a diversion but then use the gps to get me back on track so to speak. There are no English signs, out in the sticks very few locals speak English and my Thai is only good enough to be polite and make small talk.
    I love it . there are lots of biking opportunities opening in Thailand ,In the North there are way more than just mountains of Chang Mai, i ride around the Phu Pan mountains Between Udon Thani and Sakon nakon, i come across mad and massive snakes , elephants and Monkeys , deer type creatures and lizards. I usually ride alone ,but show the family where i am heading. Some times a friendly local will of stopped in my village and called in top let them know they have seen me in ????? village and that i am ok .
    The only time i have been nervous is getting a puncture and seeing fresh snake tracks , proper scared thinking how to fend off a snake with a mini pump. Sometimes the dogs get a bit too keen and close snapping away but par for the course .
    Take a bike or buy local and donate to a local , i got a shimano equipped Java with hydo disc brakes , alloy frame (stiff) hollow tech BB sealed hubs (dusty) for £240 buy it rag it and donate and you will be treat like a god.

    Whilst in Moscow in ’97 we had red square cordoned off for us and a catering tents were set up. I extracted a “loose” cobble stone and broke it up into manageable pieces and brought them home . i still have my piece of Red square. I was bricking it going through customs but the tents were due to stay erected for 3 days after we left, also i had a **** in the Kremlin- for no other reason than to tell people at parties.

    DIY it book flights and try get 2 nights Bangkok when arrive then organise everything through late rooms and a local travel agent for flights and outings , more fun and better for locals , 3 days samui is enough 3 days hui hin and a week in Phuket ,diy is such fun

    The E type , for me they are one of very few cars that i like better as a coupe than a soft top ,it looks better with a roof . That one is interesting ? I like the rat look but most folk do not get it .

    Who paid the 3m for the report to be done ?? I love cycling and even love road races, but the rules need to be harsher .Lifetime ban from all sports when caught cheating and legal action from sponsors and teams to recover monies lost ? If you lost everything would you be tempted to cheat ?

    On Friday night same thing for me ,I never realised the flashing thing showed the car was unlocked ? nothing taken but interior light turned off and cubb holes and glove box left open .Thing is i had £1200 of japenese knives in the boot in 2 knife rolls ?? I guess i got off lucky ??

    I have a home in Northern Thailand but more Eastern than Chand mai. My suggestion would be to book couple of days MTB with X biking and then leave a week spare in Chang Mai and get the guys from X biking to organise something with locals .Thus missing out the middle men commission and sanitised ? Enjoy it is epic in th north

    Congratulations – We are 3 months in today – It has flown by, I found it so so hard at 41 to adapt to the change of me not bing the important 1. I was on the phone to a mate last week and told him it was like losing my wife and gaining a flat mate with a kid . I will say it is awesome though playing and singing and having fun with him . Save up ,let family and friends treat you and cloths will be out grown very quickly .
    Plus 1 on Breast – we latch on use a pump and formula – he sleeps from 7pm to midnight then from 1pm for 3 hours then he is awake . don’t let nurses bully you and they will try .
    My wife is amazing – i am rubbish .
    we just got some pictures printed today and we can see him developing into a person already
    Enjoy it and do not feel guilty for having some me time – I get 1 evening alone on my own to drink beer , you will need a break from work and parenting -take it and do not feel guilty :lol:

    I am calling Photo shop on this . the saddle scuffs are the same colour as the leafy thing impossible in the light ? The leaf is 1 finger print from the maxis tyre and the colour runs through the saddle !

    I once made a croqumboche 3 tower cake for 180 using profiteroles filled with 3 flavours , it took 2 of us 19 hours .it was glued together with caramel and it burnt the shit out of me him and the floor we charged £1200 for it it looked and tasted awesome .it scarred me mentally so much that i have not made one since .

    I would do multiple cakes if i was at home i.e 5x 8 ” by 8″ cakes ? I made the Birthday cake for the King of Malaysia four years in a row when i lived in London. One year it was for 400 now that was a headache ? It would not go in a black cab so we had to van it round to his gaff.

    I am a profesional chef by trade and i am currently repairing my kitchen aid as the worm gear strips it self under too much load (to save the motor) The replacement gear is $2.65 in America but £46.00 over here?
    The cost £400 plus is crazy , they are great to look at and just the same as the £265 Kenwood , try get a metal bodied ken wood if you can as the plastic ones feel cheap and flimsy . Get down a shop to lift and feel them touch ect . The last time i bought one for work i got a ken wood to save cash and 3 years later its fine .

    Zane lowe has been a real asset to radio 1 . I feel he brought genuine passion and originality to the station. Of course JP can never be replaced but Zane was a real ear opener, i love driving and listening to him .
