I just use self adhesive thermoliner at work, it’s sound proofing and insulating, basically it’s all you need and doesn’t cost the earth, 1/4″ ply and veltrim carpet for the sides and easyliner carpet for the more complicated bits. Be carful what glue you use, spray glue can be a minefield, I use contact adhesive but you can use spray if you get the temperature controlled stuff

Ultremo’s aren’t as good as they used to be, michelin have struggled with road tyres for years, vredestein tri comp are pretty good and you can pick them up pretty cheap but I’d go conti gp4000s
