First thought, ditch the mudguards – wider tyres will be much more useful. I used to get pinch flats too often on 32 tyres (on the trails you will be riding) and if you are loaded up this will be more so.
What puts me off using my cross bike for offroad bikepacking (I’m fine on road) is the carbon steerer. Not certain my concerns are justified but whether your Cube has alloy or carbon steerer might be a factor in your decision.
If you are fine riding without the top levers why switch now? They might get in the way of a bar-mounted drybag.
Might end up doing it on the crosser myself.
The problem is that the weight carrying offroad is untested. There is scope for going ultraultralight – bothies, shops, cafes, so you should be ok. I believe there are no real rules for WRT.
Morrisons chickpeas or aloo sag are both satisfying comforting tasty gloops.If you live in a more cosmopolitan area than I do you will have more tinned curry options available.
When I am bike camping and tired and hungry I will quite happily eat beans cold from the tin.
I use 1 cup rice to about 1 7/8 cups water, but I would give it 35 mins simmer. I like rice to be soft but dry, not mushy. Also I would usually be frying in minimal oil for five mins before adding the water.
I wasn`t too bothered about the authority because simple % protein contents are misleading nutritionally anyway. My point is that wheat is a good protein source, particularly when combined with legumes, green leaves, and/or meat.
2012 Schwalbe tyres are tighter than older ones. I managed tubeless after a considerable struggle and don’t rockon I could fit a tube in case of puncture.

Is anyone else considering using the “track at SH837140 heading west(ish)” which is “quite interesting”? (Bwlch Siglen) Is there anything on the western side other than a cheeky scramble through the forest or down the mountainside?
I assume you will be after trout in fairly small streams. Worm on hook is best. You can simply have the line wound round a largeish tin or something (easier to hide quickly) but a rod and reel makes it easier. You want a little weight on the line about a foot from the bait so you can cast it but not enough to sink it totally. Cast it into faster water just upstream of a pool and let it follow the flow into deeper slower water where fish will be waiting for food.
