    Chief someone made me an offer I couldn’t refuse on the sync so rather than muck about with it’s intended 120mm travel I sold it and it’s currently in France doing the iron bike! The only problem with the kingdom is that my other half just bought it so I’m banned from having the same! Will consider the stantion but price is hefty!

    Thai Sweet Potato Veggie Burgers
    Vegan, gluten-free

    Bursting with flavour, these Thai-inspired veggie burgers will make your every dream come true! The patties are made with a base of shredded sweet potato and chickpeas and are flavoured with fresh garlic, ginger, cilantro, basil, and a sprinkle of lime juice and sesame seed oil. To add some delicious crunchy texture, I’ve mixed in some chopped roasted and salted peanuts into the mix. These burgers are naturally gluten-free and you can make them soy-free by using coconut aminos instead of the tamari (or simply omit the tamari all together). See my note below on making this recipe nut-free. Peanut sauce is adapted from my Almond Butter Sauce.

    Ingredients:

    For the burgers:

    1 large sweet potato
    1/2 cup cilantro, finely chopped
    1/4 cup fresh basil leaves, finely chopped
    3 large garlic cloves, minced
    2 teaspoons finely grated ginger
    1/2 cup roasted and salted peanuts, finely chopped
    3/4 cup gluten-free rolled oats, processed into a coarse flour
    1 (15-ounce) can chickpeas, drained and rinsed
    2 tablespoons ground flax + 3 tbsp water, mixed in bowl
    1/2 tablespoon sesame seed oil
    1 tablespoon low-sodium tamari (or coconut aminos for soy-free option)
    1 teaspoon fresh lime juice
    1 teaspoon ground coriander
    1 teaspoon fine grain sea salt, or to taste
    Freshly ground black pepper, to taste
    For the peanut sauce:

    1 garlic clove
    6 tablespoons smooth peanut butter (or almond or sunflower seed butter)
    2.5 tablespoons fresh lime juice
    2 tablespoons low-sodium tamari (or coconut aminos)
    1-2 tablespoons water, as needed
    1/2 tablespoon pure maple syrup (or other sweetener)
    1 teaspoon freshly grated ginger
    1/8 teaspoon cayenne pepper
    Directions:
    Preheat the oven to 350F and line a large baking sheet with parchment paper.
    Peel the sweet potato. Using a box grater with the regular-sized grate holes, grate 1.5 cups of sweet potato. Place in large bowl. I had about 1/2 of the sweet potato leftover, so I sliced it into 1-cm rounds and placed it on the baking sheet. Drizzle with oil and toss to coat.
    In a large bowl, stir together the grated sweet potato, cilantro, basil, garlic, ginger, and chopped peanuts.
    In a food processor, add the oats and process until finely chopped. You want the texture to be like a coarse flour. Stir the oat flour into the bowl with the vegetables.
    Now add the drained chickpeas into the processor and process until finely chopped. You want the mixture to be a cross between a coarse paste and finely chopped chickpeas, but don’t completely puree the chickpeas. Stir the processed chickpeas into the bowl with the vegetables and oat flour.
    In a mug, whisk together the ground flax and water. Let it sit for only 20 seconds or so, any longer and it will get too thick. Stir this flax egg into the vegetable chickpea mixture until fully combined.
    Stir in the sesame oil, tamari, lime juice, coriander, salt, and pepper all to taste.
    Shape the mixture into 6-8 patties, packing each patty tightly between your hands so it holds together well. Place each patty onto the prepared baking sheet along with the sweet potato rounds.
    Bake for 20 minutes, then gently flip the patties and potato rounds and bake for another 15-17 minutes until golden on both sides. You might have to remove the sweet potato a bit early – just keep an eye on them so they don’t burn.
    While the burgers are baking, prepare the peanut sauce. Add all sauce ingredients into a food processor and process until smooth. Adjust ingredients to taste if desired. The sauce will thicken up as it sits.
    After baking, place patties on a cooling rack for 10 minutes to cool slightly. Serve with toasted buns (or lettuce or whole grain wraps), tomato slices, roasted sweet potato, lettuce, and the peanut sauce.
    The peanut sauce will store in the fridge for at least a week. The burgers can be frozen (after baking and cooling) for a couple weeks.
     
    Notes: 1) To make the burgers soy-free, use coconut aminos in place of the tamari or simply omit it all together. 2) To make this recipe nut-free, omit the peanuts in the burgers and use sunflower seeds instead. For the peanut sauce, you can probably use sunflower seed butter instead of the peanut butter, but you will likely have to adjust the other ingredients to taste since its more bitter than peanut butter.

    But she’s missing a trick and is very rude. If someone had offered me that bike 3 years ago when I got into mtb I’d have bitten their hand off. Save it for someone who will appreciate it.

    Great event! Loved stage one, loathed stage 2 but pleased to make it unscathed, was enjoying flying on stage 3 and got a bit over excited I think and had a massive crash, lights went flying, bike on my head, picked up by a by stander, lost 5 mins or so, adrenaline kicked in and stage 4 went pretty ok considering. Pleased to finish but most annoyed at the time lost but on the plus side I got the spot prize Matbee’s wife was after!

    I have the smallest Weber and a larger cheap b and q one and much prefer the Weber.

    Can you do a whole chicken or a slow cooked joint in the small Weber?

    Chief let me know what butcher you use next time I see you as I plan on doing a lot of bbqing this summer! Homemade bbq sauce is next on the to do list!

    Personally I don’t believe in wedding gifts or money. In the past it was a tradition to help a young couples leaving the parents home and starting from scratch and things for the home were given. Couples getting married now tend to be older and already living together and already everything so think we should pay for them to have a holiday the cheek! You’ve found someone to spend your life with which is so much cheaper than being single and if you want an expensive party to celebrate that that’s fine but don’t expect everyone else to pay for it! If I got married I would say no presents but charity if you like.

    This thread is so depressing for me. Women ride bikes too you know! You lot saying it’s a trap and she just wants a new kitchen I bet you’re the ones that pull the ‘i can’t ride coz I’ve not got a pass from the missus!’ when really it’s because you can’t be arsed and don’t feel like going out in the mud and cold!

    Bought a house and the previous residents left all sorts of things they couldn’t be bothered to take. Some crappy furniture, vases and crockery but the biggest surprise was all the stuff they left in the loft a game of twister and a large black dildo hidden amongst some Xmas decorations! ! They seemed like such a nice couple of chaps when we first viewed the house! Oh also found a bottle of champagne on top of the kitchen cupboards at the back…result!

    I went in Hamleys the other day to give my Aussie niece’s the full London experience. It made me really cross. A whole floor of pink, girlie things and women in princess outfits. Hair dressing, dolls and a sodding toy vacuum cleaner! Grrrrr. When I was a young kid I wanted to be a boy for several years because the things that were considered normal for boys were what I liked… short hair, trousers, action figures, cars, wrestling and climbing trees! Luckily I had very liberal parents who allowed and encouraged me to be and do what I liked and as a grew up I realised I could be how I wanted and be a girl and it’s not held me back.

    For me it was making myself try a steep trail with gullied switch backs that I’ve not cleaned before and not ridden since the summer and getting down it without a dab and wondering what I’d been worried about. Also managing to get past the 20 mile mark as most rides have been more like 15 since winter kicked in.

    I’m aching for spring to arrive. Keep finding myself daydreaming about summery moments spent outside. All for enjoying the different seasons but 5 sodding months of winter is too much to bear!

    Raspberries, Strawberries, etc, sushi and all kinds of fish and seafood, seaweed, avocado, beans, actually there’s far too many to list and I’m not a health freak I also love pies, pastries and even the odd kfc. I just bloody love food!

    I have a very similar dream OP! Difference is I’m not panicked by the fact I’ve done no revision for my a levels as my young self somehow knows that I become a self employed trades person who needed no A levels or subsequent degree. I was a big worrier at school and uni about exams to the point where I really didn’t enjoy my time at uni much and so my dreams are trying to rectify this unhappiness by taking me back in time but with all my current knowledge of my life now!

    Can’t see what all the fuss is about. Yes it’s a bit busy in the car parks at the mo due to it being the best place to ride in the area at this time of year as even when it’s muddy it’s still fun and not claggy. Once you’re out on the trails it’s hardly over crowded! Evian bomb hole is no more dangerous than many other trail features up there. Just check your speed, and stick to right a bit.

    I use animal friends they’ve been good with paying out so far. We have lifetime cover also. A little under 25 a month for a 5 year old black lab.
