Depends on where you go and what sort of riding…….
Open access to trails / paths etc – same as in Scotland so no need to worry about “can I ride there” type stuff.
If you want maps in 1:50k or 1:25k then Kompass do a big range – Lakes, Alps etc that show more than enough detail to ride.
If it’s road riding then most local Italian clubs ride on Sat / Sun in large family peletons (more in the north than south) – I’ve experienced that they are always happy to let you join in.
If you want bike parks / chairlifts then I only have experience of Italian Alps not Dolomites (but assume it’s the same) and whilst some places are remote most cable cars welcome bikes, some specific resorts have dedicated chair lifts.
Most towns / riding spots have good LBS / Club Networks or are bike specific (Italy Bike Hotels, Finale Liguaria, Lake Garda Bike etc) and do group rides and tours that you can pay a fee or turn up to and ride, often with published itineries.
Other than that – get out and ride. Less traffic in the North than South (in my experience).
