More or Less is a statistics programme/podcast on Radio 4 and held in much esteem by many (including me).

I have only knocked back after first proving when I am not making a sourdough bread.

If I was doing normal “yeasted” bread I would knock it back after the first hour of proving and then prove for another hour before baking.

Sadexpunk’s bread looks like a sourdough to me a much slower and longer process.
think you need to look at your structure building and get more tension in the outside of your dough Sadex…. but I may be wrong.

Your problem will be wind near the ground..if it is too strong you won’t be aloud to take off.
Once you are airborne and clear of the first few hundred feet no worries.

I would not get stressed.

Changed the headlamp bulb on my mondeo….

Cable to release the bonnet snapped and I had to open it via removing the under-tray and going in from below.. replaced cable and put in new bulb …all took less than 4 hours.

After a couple of decades in NHS management I had a big breakdown.

Took my HGV class 2 at 53 then a year later my class 1. It costs around £1500 for each one (there are huge variations and it helps a lot if you pass first time). Each took 1 week.

The work and pay varies with who you work for and where you live. I live in the Midlands and there is a massive shortage of drivers (especially one who can speak English).

Took a easy job in distribution largly trunking from one warehouse to another. Work is reasonaly varied and I don’t get bored. Worl 4 days on and 4 off, but on my working days they are quite long. I NEVER stop overnight in my cab, but if you are OK doing that you should earn more. Hourly paid so earning can vary but I get around £28K and that gets me by…
