Can’t comment on the rims but I run a non-UST Minion on a Stans Flow rim with stans sealant and haven’t had any problems. If the rims are UST compatable, I would think they would be fine, otherwise use a stans rim strip.
No need to fit ferrules under the top tube, the gear cable outer just passes straight through them. They are a sloppy fit though.
Very likely to gall on installation. Use an anti-sieze compound as stated above, my choice is Rocol Food Lube.
